There comes a day when the non-cooker holds one more frozen "healthy" entree in her hands, and thinks, "How much longer can I live on these?"
A few months ago, that happened to me. I have relied on convenience foods and Mom's charity (or leftovers!) for many years. So, to no longer be a slave to the "instant" meals in my freezer, I've decided to start cooking!
As I try new, healthy recipes I will be sharing them with you -- along with a "quickie" review that gives you an idea of what I thought of them.
This week, it's low carb entree recipes on the menu, as provided by About's low carb Guide, Laura.

I used the pumpkin "innards" from my jack-0-lantern in this recipe instead of wasting them! Pumpkin just seems to be one of those foods for dessert, not a meal. I would not have been so brave to try a pumpkin entree before ... to my surprise it was delicious! - Thai Coconut Curry Chicken
I absolutely love coconut, so I got over my fear of trying something so new and different really quickly when I ran across this recipe. This was not only the first Thai dish I ever tried but also my first "skillet meal." I was so sure I would burn everything -- it was a complete success. If I did it anyone can! - Apple Bacon Chicken
You know, it must be true that bacon makes everything taste better. Who knew apple and bacon would combine to make such a yummy dish? Not me! The combo of sweet and salty makes this one a winner. - Low Carb Creamy Southwest Chicken
I like some spice, but not too much, and this dish fit the bill. The chiles are mild so they add flavor rather than making the dish really hot. I used canned chicken chunks to make this dish and it still came out simply delicious. Who says healthy cooking can't be convenient? - Low Carb Chicken Marsala
I love Italian food, but the closest I ever got to making it was boiling spaghetti and adding jarred sauce. The verdict? Yum, yum, yum! It was easier than I imagined, too.
