We overbought eggs for Easter weekend and couldn't possibly use them all for coloring. Three-dozen have a use-by date of May 15 and we've been, er, scrambling to use them up all week.
Aside from the obvious we've tried to use them for baking (as healthfully as possible, natch), we've eaten egg-salad and tuna-salad sandwiches made with low-fat mayo and hard-boiled egg whites as snacks.
When I read research that having eggs at breakfast could aid weight loss by helping people eat less all day, I was all for them, but this is getting a bit extreme!
